Have you had Texas Twinkies? If not, you are in for a treat. This is a jalapeno that is stuffed with cream cheese, smoked brisket, and wrapped in bacon. Toss these stuffed brisket jalapenos on the grill or even toss them in the oven for a mouth-watering appetizer.

Now I love a jalapeno stuffed with cream cheese wrapped in bacon, but this brisket-loaded pepper takes the cake. You will also find that pairing it with my Longhorn steak seasoning for whipping up a restaurant-quality steak.

For stuffing this recipe I used my brisket recipe that I used for smoking on the Traeger grill. These will elevate any bbq to a whole new level.

What Are Texas Twinkies?

Texas Twinkies are a popular smoked appetizer that came from Texas. They are a jalapeno that is cored out and filled with cream cheese, smoked brisket, and then wrapped in bacon.

Toss on the grill or smoker and create a melt-in-your-mouth appetizer. While there are different ways to make these stuffed peppers you will find this recipe is a game changer.

Ingredients

Brisket – This is the meat of choice I used. You are welcome to use pulled pork, cooked sausage, beef, etc. Any cooked meat will work for stuffing.

Jalapenos – Reach for medium to large-sized peppers for this recipe. This is best so you have room to stuff.

Cream Cheese – Softened cream cheese is needed to create the creamy filling.

Bacon – Reach for any type of bacon you want. I love applewood bacon but it is whatever you prefer.

How to Make Texas Twinkies

Full steps are featured at the bottom of the post. This is a visual walkthrough on how to make them.

  1. Wash and prep your jalapenos. You will core out the white membrane and remove the seeds. Rinse in cold water to remove excess oil.
  2. Use softened cream cheese and spread it in the center of each of the peppers.

Expert Tip: If you are not used to working with raw jalapeno peppers, then wear gloves. The oil can hurt your hands if you have sensitive skin.

  1. Stuff with some pulled brisket.
  2. Then place the pepper together and wrap with bacon.
  3. Secure the peppers with toothpicks.

  1. Toss peppers on the grill and cook until the bacon is fully cooked on all sides.
  2. Remove and let cool for a few minutes then serve and enjoy.

Top Tips For Success

  • Soaking jalapenos once they are cored and seeded in a lemon-lime soda can help remove the spice of peppers. You can soak for 30 minutes up to an hour.
  • Make sure to not overfill the peppers, as they can seep out once it is being cooked.
  • Secure the bacon with toothpicks to ensure the bacon doesn’t fall off and the filling doesn’t seep out.
  • You need to make sure the bacon is fully cooked before you remove it from the grill.
  • If you bake these stuffed peppers in the oven, make sure you rotate the peppers as they cook to evenly cook the bacon.

Variations to Recipe

  • Use sweet mini peppers instead of jalapenos.
  • Change out the meat to pulled pork, chorizo, cooked sausage, etc.
  • Add in some shredded cheese. Sharp cheddar, pepper jack, etc.
  • Drizzle with your favorite bbq sauce once done.
  • Season the cream cheese if you want with your favorite spices.

Storing

Refrigerate any of the peppers you do not eat right away. Just place them in an airtight container and store them in the fridge. They will last 3-4 days. You can eat them cold or warm them up.

Freeze Texas Twinkies for up to 2-3 months. Place in the proper container and then freeze until you are ready to eat. Thaw in the fridge overnight, then reheat as you wish. Or warm them up straight from being frozen.

FAQs

Can Texas Twinkies be baked instead of grilled or smoked?

You can bake these stuffed peppers on a rimmed baking sheet at 375 degrees Fahrenheit. Bake for 25-30 minutes or until the bacon is fully cooked. When the bacon is crispy and fully cooked, serve them up. Depending on the thickness of the bacon depends on the cooking time.

What can I serve with Texas Twinkies?

Grilled meat, summer side dishes, cornbread, and more are all great options. You can honestly serve these stuffed peppers with anything you would like.

Texas Twinkies

Equipment

Ingredients

  • 8 jalapenos sliced and de-seeded
  • 8 slices thick cut bacon
  • 12 tablespoons cream cheese room temp
  • 2 cups smoked brisket chopped or shredded

Instructions

  • Slice your jalapenos in half, and then de-seed the peppers and remove the white membrane.
  • Rinse peppers under cold water to remove oils and wash off any lefotver seeds.
  • Spread cream cheese that is softened on both sides of the peppers. Leave room for the brisket.
  • Next add some brisket on top and press it into the crem cheese to hold it in place.
  • Press the pepper back together and then wrap in a strip of bacon. Begin at one end of pepper and twist the bacon around the pepper working it down the pepper. Secure with toothpicks to hold the bacon in place.

Oven Baked Method

  • Preheat oven to 400 degrees. Then place peppers in a single layer on a rimmed baking sheet. You can place the pepeprs on a wire rack on top of the baking sheet to allow the grease to drip off peppers.
  • Bake for 20-30 minutes or until the bacon is cooked all the way through.

Grilling Method

  • To grill peppers you will heat grill to 400 degrees.
  • Place the peppers on the grill and cook for 3-4 minutes, rotating the peppers. That way all sides of the peppers and bacon get an even cook. Once the bacon is fully cooked then remove from the grill.

Smoker Method

  • Preheat your smoker to 275 degrees.
  • Place peppers on a wire rack, and cook for 60-90 minutes or until the bacon is fully cooked.

Peppers – The bigger the better when it comes to stuffing Jalapenos. 
Spice – If you want peppers to have some spice then leave some seeds in the peppers. To make it mild remove the seeds and membrane. 
Meat – If you don’t want to use brisket swap with any cooked meat. Pulled pork, chicken, sausage, etc. 
Cheese – Feel free to add shredded cheese to elevate the flavor. 
Cook Time: No matter the method of cooking know that the cook time will vary depending on the size of your peppers and the thickness of bacon.

What is A Chicken Lollipop?

Chicken lollipops are frenched chicken wing style that gives you all the meat/flesh up at the top of the bone. This allows you to hold the chicken by the bone, and eat it as you would a lollipop. The bone end being exposed bone gives you a good handle aka lollipop piece.

Ingredients Needed

Chicken Drumsticks – You will want to buy a package of drumsticks or chicken legs, you might call it different depending on where you live.

Oil – You will use a bit of oil for this recipe. I find that olive oil, canola, or vegetable oil all work for this smoked chicken legs recipe.

Seasoning – I bought a jerk seasoning for this chicken recipe. Now you could use bbq seasoning of choice, and then slather with bbq sauce at the end of the cooking process if you wanted.

How to Make

Full steps on how to make these lollipop chicken legs are in the printable recipe card. This is a visual walk through are in the printable recipe card at the bottom of the post.

Step One: Preheat your smoker or grill and set it to 225 degrees F.

Step Two: Pat dry your chicken and then use a sharp knife and make a cut into the skin of the meat. You will want the meat to come off the knuckle area of the bone revealing the bone.

Step Three: Then you will work with your knife at peeling and cutting the chicken and skin pushing the meat as far to the top as you can. This will create the lollipop pieces.

Step Four: You need to level off the top of the meat so that it will stand up, if you need trip the chicken a bit. Then repeat with all the chicken legs.

Step Five: Brush with oil, and then season each of the chicken pieces with the Jerk seasoning. Make sure to massage all over the chicken and skin.

Step Six: Place chicken on the smoker or grill, and cook directly on the grates, meat side down.

Step Seven: Next allow the chicken to cook until it reaches 165 degrees F. This took about 2 hours on our grill.

Once done remove the chicken and serve! Feel free to pair with dipping sauces like barbecue sauce, hot mustard, etc.

Recipe Notes:

If your chicken meat and skin doesn’t push down too easily, simply add a bit more slices in the side of the meat. That will help ensure all the meat gets to the bottom.

When you check the internal temperature, use a meat thermometer. Make sure to not touch the bone, or it will give you a higher temperature than what the actual meat is.

You can wrap the bone pieces on the end of each lollipop chicken with aluminum foil. This will help make it look a bit nicer for serving up if you would like.

Storing Leftovers

Refrigerate: If you don’t eat all the drumstick lollipops just store in the fridge in a proper container for 2-3 days. Then reheat in the microwave or oven for the same great flavor as fresh off the grill.

Freezer: You can freeze any leftovers as well. Place in a freezer bag or freezer friendly container. The chicken will freeze for 3-4 months. Thaw in the fridge overnight and then reheat how you would like.

Chicken Lollipops are a delicious seasoned chicken drumsticks. Smoked chicken that is restaurant quality chicken lollipops. A great appetizer or dinner to serve up your family.

Ingredients

  • 2 pounds chicken drumsticks 8-10
  • 2 tablespoons oil
  • 2 tablespoons Jerk Seasoning

Instructions

  • Preheat the smoker or grill to 225 Degrees F.
  • Then pat dry the chicken drumsticks with a paper towel.
  • Then with a sharp knife you will make a cut in the skin, through the tendons, in the middle of the bone. Under the knuckle of the drumstick.
  • Then you will use your hands to push down the skin and meat to the end of the chicken. If you need to cut more of the meat do-so to get all the chicken meat and skin to the top of the chicken leg.
  • Now you will brush your chicken with oil, and then add your seasoning to the meat. Make sure to coat all sides of the chicken.
  • If your chicken won't stand up meat side down you can trim the meat or skin so it is flatter and will stand up.
  • Place the drumsticks on the smoker/grill meat side down, and cook for about 2 hours. I put the chicken direction on the grates. Cook until the chicken reaches 165 degrees internally.
  • Once the chicken is done, remove from the smoker/grill and let it rest 5 minutes, then serve the lollipop chicken with your favorite dipping sauces.

Notes

Cook Time – Depending on your grill or smoker the cook time can vary a bit. 
Grill – I used a Traeger Wood Pellet Smoker for this recipe. 
Seasoning – You can season your chicken any way you want. Go simple or complex if you want.

Smoked brisket is crazy simple to make. All you need is 4 ingredients and a little time. A tender and juicy brisket recipe you can slice up or shred and serve. 

Many get intimidated by brisket, and I am here to tell you to take the leap and learn how to smoke brisket! Skip your favorite BBQ pit and master smoking brisket at home.

You will see a smoke ring as you slice into the brisket. We used a pellet smoker , but you could also use wood chips, wood chunks, or whatever you prefer. For a tender brisket the idea is low and slow, for a long smoke process.

I went with a Texas style brisket recipe. Salt, pepper, and brisket is all you need. Now for us we added in a little smoked paprika to enhance the flavor even more.

Ingredients Needed 

Here is all you need for this BBQ brisket! You will love how you probably have everything on hand. 

Beef Brisket – You can use any size brisket you want. For our family we did a 3 ½ pound brisket. If you want a larger one just add additional time to cook time and make extra rub. 

Salt – Kosher coarse salt is what I recommend. It will really help add tons of flavor to the beef. 

Pepper – Coarse ground pepper is another great one. You can use traditional pepper but it won’t be as vibrant in flavor. 

Smoked Paprika – We love paprika in our home. This is optional but the paprika adds an additional layer of flavor. 

Tools Needed

Smoker – We used our Green Mountain Grill but you are more than welcome to use any grill or smoker you own. 

Foil or Meat Paper Either works for wrapping the beef brisket once it is cooked so long. It is all about whatever you prefer.

Cutting Board – I used a large wooden cutting board for seasoning our beef and slicing. It catches any drips of juice. 

Tongs or Spatula – You will need a way to flip over your cut of beef as it smokes. 

Sharp Knife – Trimming and slicing up brisket yiu will need a knife. This serrated knife is what we used. 

Why You Need to Trim  A Brisket

  • Too much fat will not allow a good bark to form.. 
  • Undercooked and overcooked areas depending on thickness.
  • Smoke will not properly penetrate beef. 

How to Trim a Brisket

Depending on the brisket you purchased, some briskets come pre-trimmed. If that is the case, you can skip this section. 

Step One: First start with the underside of the brisket. Use a fillet knife, and begin trimming the white fatty area. 

Tip: It is ok to leave some fat on the brisket. You just want to ensure it is not too thick of a layer. Thinner areas of fat will cook down with the brisket. 

Step Two: Flip the brisket over and repeat the same steps. Then if you need trim down sides and your set on trimming. 

Step Three:  Silver skin is a very shiny and white looking skin. This will leave your brisket extra chewy if you do not cut it away. 

Take the time to trim away any of this skin you find on your brisket. 

The goal is to create a uniformed piece of meat. If the meat is too thin in a particular trim it, as it can burn and over cook easily. 

How to Smoke Brisket

Full directions are below in the printable recipe card. This is a visual walk through.

Step One: First start with the underside of the brisket. Use a fillet knife, and begin trimming the white fatty area. You want to get rid of the excess fat, and muscle fibers. This results in a better results at the end of cooking the smoked meat. 

Depending on your local butcher, you can ask them to trim the brisket for you before you purchase. They are pros and it eliminates the hard work.

Step Two: In a small bowl add your coarse salt, coarse pepper, and smoked paprika. Mix to combine.

Step Three: Take the seasoning and massage it into the meat on both sides and edges of the brisket. Make sure to get the sides of the brisket as well.

Step Four: Next, once seasoned, set beef on the counter and preheat the smoker to 225 degrees F. 

Step Five: Next, place beef in the smoker, either side works. And let it cook for one hour at this temperature. 

Step Six: Then after an hour pump up the heat to 225 degrees Fahrenheit. Allow the brisket to cook for 4-5 more hours. When it hits 165 degrees F, I like to remove from the smoker, and wrap in paper or aluminum foil. Then return to smoking. 

Recipe Notes:

Depending on size it will cook for a shorter or long time. Brisket is ready when the internal temperature reaches 185-190 degrees F. 

If you want to pull the meat, allow the internal temperature to go up to 200-210.

Step 7: Remove brisket and wrap in aluminum foil or butcher shop paper. Then wrap in an old towel and let it rest for 20 minutes.

Then with a sharp knife, slice or shred your brisket. I use these meat claws for shredding pulled pork, pulled chicken and of course this beef. 

Expert Tips For Success

Expect 1 ½ – 2 hours per pound of brisket for cook time at the heat of 225 degrees Fahrenheit. So ideally, 3 pounds takes roughly 6 hours. Or a 10 pound brisket could take 15-20 hours. 

Allow your meat to rest. This is imperative. Letting the meat rest 20-30 minutes once cooked helps ensure it is going to lock in juice for a juicy tender result. Cutting meat as soon as it comes off the grill will release all the juices and leave you with dry meat.

Ingredients

  • 1 3-4 pound Brisket
  • 1 tablespoon Kosher Coarse Salt
  • 1 1/2 tablespoons Black Pepper
  • 1/2 tablespoon Smoked Paprika optional

Instructions

  • Preheat your smoker to 225 degrees F.
  • Trim your brisket by removing the excess fat and silver skin. We purchased a pre-trimmed brisket so there wasn't the excess prep work.
  • Then you will mix your salt, pepper, and paprika in a small bowl. Once well combined begin massaging into the brisket.
  • Make sure to do all sides and even the edges. Once well seasoned head out and place your brisket on the smoker.
  • Aim to cook your beef brisket for 1 1/2-2 hours per pound of brisket. So a 3 pound brisket can take up to 6 hours to fully cook.
  • About half way through cooking, flip over the brisket to allow an even cook on both sides.
  • Smoke your brisket until it reads 165 degrees internally. This takes a few hours to reach this internal temperature. Depending on how large the cook time will vary greatly.
  • Once your brisket reaches 165 degrees, remove and wrap in aluminum foil or even meat paper. Then place it back on the smoker to finish cooking.
  • You want to continue cooking your brisket wrapped until it reads 202 degrees F internally. Once it is done allow it to rest for 30 minutes up to 1 hour.
  • Slice your brisket against the grain. You can also shred your brisket if you prefer, it should be nice and tender so you are welcome to do either method.

Seasoning – You are welcome to change up how you season your brisket. Adding some garlic powder is a delicious option as well. 
Trimming – Make sure you do not skip trimming away excess fat if you don’t purchase a pre-trimmed brisket. 
Cook Time – You need to adjust the cook time according to how large or small your brisket is. Average time is 1 1/2-2 hours per pound of meat you are cooking. 
Resting – You need to allow your brisket to rest once you pull from smoker or it will dry out and not stay moist and tender.

Thai Salad is a chicken salad loaded with purple cabbage, crisp romaine lettuce, carrots, bell peppers, edamame, cilantro, and drizzled with a homemade Thai salad dressing that is sweet, spicy, and tangy.

I love a good salad, so having a Thai chicken salad helps to bring a fresh and lightness to your dinner table. You can ramp up the spice, or tame it down, I share how to do both options.

Pro Tip: You can make this a Spicy Thai salad, or tame it down so it is slightly spicy. You have options.

How to Make

Full steps for making this chicken Thai salad are in the printable recipe card. This is a visual walk through on how to make this easy salad.

Step One: The first step to making this salad is making the peanut dressing. Add your peanut butter, honey, soy sauce, water, rice vinegar, minced garlic and ginger, sesame oil, lime juice, and red pepper flakes in a bowl.

Step Two: Heat a medium skillet on medium heat, and spray the pan with cooking oil. Place your boneless chicken in the pan, and then baste the chicken with the sauce.

Step Three: Cook the chicken for 4-5 minutes and then flip the chicken. Then baste the chicken on the other side. Cook another 4-5 minutes, or until the chicken reaches 165 degrees Fahrenheit.

Step Four: Once the chicken is fully cooked, remove from the pan and allow it to cool 5 minutes then slice into strips.

Step Five: In a bowl add your lettuce, veggies, and then top with chicken, and drizzle with the Thai peanut dressing.

Recipe Notes:

  • I used Romaine and red cabbage for this salad. You are welcome to change up the greens used.
  • If you want a more mild salad, then use 1/4 teaspoon red pepper flakes. For spicy do the 2 teaspoons red pepper flakes.
  • If you have leftover chicken you can use that. You don’t have to sear the chicken in a pan with the sauce. It does help add tons of flavor, but you can use rotisserie chicken, or shredded chicken you have on hand.

Storing

You are welcome to store any salad you don’t eat right away. Just store the chicken in a separate container than the vegetables. This will help prevent the veggies from wilting. Then reheat the chicken or serve it cold, both will work.

Meal Prep

To make this salad for meal prepping, simply use mason jars. Place the dressing on the bottom and then add in items like the edamame and other ingredients so it acts as a barrier. End with lettuce on top.

Then shake and serve up the salad. Or store your salad in a plastic container and the dressing separately and mix right before serving.

Thai Salad Dressing

  • 2 tablespoons peanut butter
  • 2 tablespoons honey
  • 2 tablespoons water
  • 2 tablespoons soy sauce, light
  • 1 tablespoons sesame oil
  • 2 teaspoons lime juice
  • 1 tablespoon rice vinegar
  • 2 teaspoons red pepper flakes or do 1/4 tsp for less spice
  • 2 teaspoons minced garlic
  • 2 teaspoons ginger minced

Thai Salad Ingredients

  • 4 ounces chicken
  • 2 cups Romaine Lettuce chopped
  • 1/4 cup red bell pepper diced
  • 1/4 cup purple cabbage shredded
  • 1/4 cup carrots shredded
  • 1-2 tablespoon cilantro chopped
  • 1/4 cup edamame
  • 1 tablespoon chopped almonds
  • 1 teaspoon oil

Instructions

Thai Salad Dressing

  • In a small bowl you will want to add in all your dressing ingredients. Peanut butter, honey, soy sauce, water, vinegar, oil, lime juice, red pepper flakes, garlic, and the ginger.
  • Mix well until nice and creamy and set aside.

Thai Salad

  • In a skillet on the stove, add the oil and then heat on medium heat.
  • The first thing is to take your raw chicken and take just a little of the peant sauce and baste the top side.
  • Place the chicken in the skillet once the oil is hot. Sear for 3-5 minutes per side. When you go to flip the chicken over to cook the other side, baste the other side of the chicken with the peanut sauce.
  • When the chicken reaches 165 degrees Fahrenheit internally, remove and allow the chicken to rest 5 minutes.
  • Now add your lettuce and all your veggies into the bowl and top with the sliced Thai chicken. Then you can drizzle with your Thai dressing, and enjoy.

Notes

Lime – You can use lemon or lime juice for this recipe. 
Spicy – Use 1/2 teaspoon for a mild flavor or 2 teaspoons for a spicy Thai salad. 
Meal Prep – If you want to meal prep you can store your dressing in a separate container, or add to bottom of a mason jar. Then add edamame and other sturdy veggies, to help act as a barrier. Then lettuce on top. 
Chicken – You want to make sure your chicken reaches 165 degrees F internally. Depending on size of chicken the cook time will vary.
