Quick Guide On How To Make

Step 1: Cook the potatoes

Add butter to the Blackstone griddle and add hashbrown potatoes. Cook until lightly browned and softened, about 8-10 minutes.

Step 2: Cook the sausage

Brown the breakfast sausage. Cook until cooked all the way through.

Step 3: Scramble the eggs

Ingredients

  • 1 pound sausage any variety
  • 12 large eggs
  • 2 cups hashbrowns frozen
  • 1/2 cup half and half or milk
  • 1 cup cheese shredded
  • 8 large tortilla shells
  • salt to taste
  • pepper to taste
  • butter as needed to butter the grill

Instructions

  • Coat the griddle with butter then add the hashbrowns. If they become dry as they are cooking you can add a little bit of water or some additional butter. Cook until golden brown and soft, about 8-10 minutes.
  • Cook the sausage until it is done.
  • Combine the eggs and half and half in a bowl. Whisk until the egg yolks are broken and the cream is incorporated.
  • Add butter to the griddle and scramble the eggs. Combine the eggs, cooked hashbrowns, and sausage together. Season with salt and pepper.
  • Add burrito filling to a tortilla and top with cheese. Roll up and place the seam against the buttered griddle. Cook until golden brown, about 2-3 minutes.

🛒 What You Need to Cook Frozen Fries on a Blackstone

Here is all you need to do to make these French fries on the grill!

Frozen French Fries – Whether you prefer curly fries or shoestring fries you can pick any variety of frozen fries you want. 

Oil – You will use any oil you prefer when cooking on Blackstone. 

Seasoning – Adding seasoning is optional. I sprinkled on season salt to add more flavor. You can serve plain or just lightly salt if you prefer.

Types of Fries – Any fries works for this recipe. You could even venture out and do tater tots with the same cooking process. 

Toppings – Consider adding on some shredded cheese once your fries are done. Or drizzle with some garlic and Parmesan. You can dress up your fries any way you want

Full steps on how to cook French fries on Blackstone are featured below. This is a quick walk through with images. 

Step One: Heat your Blackstone grill to medium heat and allow to preheat. I normally let it preheat for 10 minutes. 

Step Two: Liberally add oil to your griddle grill and spread it out,

Step Three: Carefully a little at a time drop some fries in the grill. It will splatter grease so be prepared.

Step Four: Next you will let cook for a few minutes and then flip once fries start to turn golden. Season with choice of seasoning. 

Step Five: Cook until all the fries are cooked on all sides and golden in color. 

Once done dish up and serve with any of your favorite condiments or dipping sauces. 

Recipe Notes:

Make sure you allow your Blackstone griddle to get nice and hot. Otherwise, the fries won’t crisp up properly. 
Only drop down a few fries at a time. If you dump a ton at once,e it can cause your grill to warp due to the huge influx of temperature. 
Make as many or as few fries as you would like. 
The cooking time for these flat top griddle fries varies depending on the temperature of the grill and the thickness of the fries. 

Storing 

I recommend making only what you plan to eat fresh and warm off the griddle. The texture and flavor will change significantly once it is frozen. 

If you happen to have leftover fries, you can store them in an airtight container in the fridge for 1-2 days. Then reheat on a Blackstone, in the microwave, or the oven.

  • 1/2 bag Frozen French Fries
  • 3 tablespoons Oil
  • 1/2 teaspoon Seasoning

Instructions

  • Preheat your Blackstone Grill to medium heat for about 10-15 minutes. You want to make sure your grill is nice and hot.
  • Then you will add down 2-3 tablespoons of oil. You want a good amount as it is going to give your fries that crispy texture.
  • Slowly add a little bit of fries at a time. Do handfuls, don't dump them all or it will potentially warp your Blackstone. Season with season salt, or any other seasoning of choice.
  • Cook undisturbed for 2-3 minutes, and then check to see if they are turning golden brown. If so you will flip them over and cook the other sides.
  • Cook until the French fries are golden brown and crispy. Once they are done remove from the griddle and place in basket and serve.

French Fries – Any brand of fries work. I used a straight cut fry for this recipe. If you use a larger or thicker fry adjust the cook time as needed. Depending on the thickness of the fries the cook time varies. 
Heating Griddle – You want to cook on medium heat, if it is too hot it will burn, and you run a higher risk of warping your griddle from the frozen fries. 
Seasoning – You can leave your French fries plain or season them. If you do just salt then season right after you pull off the griddle.

Serve up this Blackstone steak bites and potatoes recipe with garlic butter. A simple tender steak bite recipe paired with diced crispy potatoes. A must make easy Blackstone recipe. A Blackstone steak bites recipe that is phenomenal. A simple and quick dinner you make all on your Blackstone griddle. 

The garlic butter sauce really flavors the steak pieces and potatoes.

Now if you don’t have a Blackstone or another type of flat top grill, you can make it on the stovetop. I share the directions for both cooking methods in the printable recipe card.

This Blackstone Steak and Potatoes Recipe Is..

Ingredients 

Steak – You can use any cut of steak you want. You will cube it up into 1-inch cubes. 

Potatoes – I diced up small potatoes. These work great as you don’t need to peel the potatoes as the skin is very thin. 

Butter – Use real butter that is unsalted. This is going to be drizzled on the cooked steak and potatoes. 

Garlic – Minced garlic is what you will want. You can use jarred garlic or mince it yourself. 

Seasonings – Kosher salt, pepper, and. Garlic powder is all I used to season the steak and potatoes. Kosher salt helps to really enhance the flavor of the potatoes and steak. 

Oil – You will need oil to put down on the Blackstone. We tend to use Smart Balance oil, but any works just as long as it isn’t olive oil as that oil can not handle high heat. 

Cuts of Steak To Use

Steak lovers will love all these cuts of beef. They offer the perfect marbling of meat and fat for a juicy steak bites end result. Here are some cuts of beef for this garlic butter steak bites recipe that could work nicely. The key is good steak, so your meat isn’t tough.

  • New York Strip Steak
  • Rib eye
  • Top Sirloin
  • Flat Iron Steak
  • Etc.

Variations Ideas 

Here are a few ways to change up this easy steak bite recipe! There is so much flavor that will melt in your mouth. Here are some changes to consider. 

You can use any cut of steak you would like. Top sirloin steak, ribeye, flat iron steak, etc. 

Any oil can be used if it has a high smoke point, so it doesn’t burn and smoke too much as it cooks. 

Toss on some veggies to add more flavor. Dice up some carrots, mushroom, broccoli, or other crisp veggies. 

Top the dish with some fresh parsley for color and added flavor. 

Change up the flavor of steaks with seasonings you use. 

Serve the rice over a bed of rice, or even toss some leftover rice on the griddle and sear it up right before serving.

How To Make

Step One: First step is to dice up your steak into bite size pieces. I did around 1-inch cubes. Head outside and turn on your Blackstone to high heat. 

Step Two: Season steak cubes with a little oil, kosher salt, pepper, and garlic powder. Toss to coat and set aside. 

Step Three: Prep potatoes by rinsing and then dicing up into bite size pieces. Season with oil, salt, pepper and garlic powder. Toss to coat and set aside. 

Step Four: Head out to grill and add oil on one side of the grill for potatoes. If you have a smaller grill just cook potatoes first. 

Step Five: Toss potatoes on oiled grill and place in a single layer. Add a little water and quickly cover potatoes. Steak potatoes for about 4-5 minutes. 

Expert Tip: Don’t have a Blackstone dome? Use an aluminum foil 9×13 baking pan. It’s affordable and works great as a dome. 

Step Six: Next remove the dome and stir potatoes a bit making sure they flip over so they don’t become too brown on one side. Add a squirt more of water and place the dome on again to steam. Cook for another 5 minutes. 

Step Seven: Add oil to the other side of the grill and toss on the seasoned steak. Cook for a couple of minutes and then move steak around to sear al sides. 

Step Eight: Remove cover over potatoes and cook a bit longer without the  lid. This will finish cooking the potatoes and creating a nice golden outside. If you need add a bit of oil.

Step Nine: Place a small dish on Blackstone with butter and garlic and let melt. Then drizzle over steak and potatoes. 

Once both are fully cooked, remove and serve up. Use any leftover garlic butter to drizzle on steak bites and potatoes as you serve it for additional flavor. 

Helpful Tips for Success

Cut potatoes and steak into similar sizes. That way as it cooks you get an even cook on all the pieces. 

Steaming the potatoes will help cook then through and prevent the potatoes from drying out on the flat top grill. 

I serve the extra garlic butter on the side if anyone wants to drizzle their meat or potatoes with more of the butter mixture. 

The better quality steak you have the more tender the end result will be. 

Aim for a single layer of potatoes and steak. Don’t pile it on top of each other or you will get an uneven cook.

Ingredients

  • 2 pounds steak diced in 1 inch cubes
  • 6 tablespoons unsalted butter
  • 1 1/2 tablespoons minced garlic
  • 1 pound new potatoes diced into bite size pieces
  • 3 tablespoons oil
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Kosher salt
  • 1 teaspoon black pepper
  • 1/2 cup water

Instructions

  • The first step is to preheat your flat top grill to high temperature.
  • Grab two bowls, one for steak and one for potatoes. Then cube up your steak, and potatoes. I did 1 inch cubes for steak pieces and then for potatoes I cubed in half to quarters depending on the size.
  • Then pour 1/2 teaspoon of oil in each of the boils. Along with 1/2 teaspoon salt in each, 1/2 teaspoon pepper, and split the 1/2 teaspoon of garlic powder between the two.
  • Toss with a spoon to coat all the potatoes in the steak and potatoes. Then head outside.
  • Add a little oil to one side of your Blackstone, and toss down the potatoes. Spread into a single layer. Squirt on some water, and cover with a dome, or 9×13 aluminum foil pan.
  • Let the potatoes cook for 4-5 minutes. Then remove the dome, stir well, squirt more water, and then cover again for another 4-5 minutes.
  • Add your butter and garlic into a small pan and place on the side of the grill to let it melt.
  • Toss down your steak, and sear on each side. You will cook the steak till your desired doneness. I made ours well done.
  • Remove the dome from the potatoes and stick a fork in to check the doneness of the potatoes. If the potatoes are done they will be fork tender. If you need repeat water and dome one more time. Or let them finish cooking witout the lid.
  • Once the steak and potatoes are cooked spoon some of the garlic butter mixture over the steak and potatoes. Stir to mix and then plate up the garlic butter steak, potatoes, and serve the rest of the garlic butter on the side.

Cast Iron Skillet Directions

  • Prep the potatoes and steak the same way. Get the pan hot with some oil in the pan. Heat on medium-high. Then cook the potatoes until they are fully cooked and nice and golden. This took around 6-7 minutes per side.
  • Remove the potatoes and then toss in the seasoned steak bites. Cook until it is done to your desired doneness.
  • Add the potatoes back into the skillet and spoon over some melted butter with garlic.
  • You can heat the butter up in the microwave or on the stovetop in a small pan. Use extra for added drizzle if people want.

Notes

Steak – There are so many varieties of steak to use for this recipe. The biggest thing is to evenly cube and the better quality steak the more tender the beef will be. 
Potatoes – The potatoes are optional, but they pair really well with the steak. 
Flat Top Grill – Any brand of flat top grills will work for this recipe, or reach for a skillet and cook on the stove.

Incredible chicken breast smothered in honey mustard, crunchy bacon, and mushrooms!

This easy smothered chicken breast was inspired by a restaurant I used to visit called Montana Mike’s. They had what was called the Mountain Topper Chicken, and it was my FAVORITE!

How To Make Blackstone Chicken Breast

Step 1: Cook the chicken

Start by heating the Blackstone to medium-high heat. Once hot, melt butter on the griddle. Add thin pieces of chicken and cook for 7 minutes then turn. Cook for an additional 8-10 minutes or until the chicken reaches 160 degrees F.

Step 2: Cook the bacon

While the chicken is cooking, begin cooking the bacon. Cook until crispy and set aside until the chicken is done.

Step 3: Cook the mushrooms

While the bacon is cooking, add some more butter to the Blackstone and add mushrooms. Flip as needed until they reach the desire texture, about 10 minutes.

Step 4: Put it all together

Once the chicken is done, add honey mustard to the chicken. Add the bacon and mushrooms. Sprinkle cheddar cheese and let rest for 2-3 minutes or until the cheese has melted. Garnish with parsley (if desired)

Do I have to add mushrooms?

Nope, if you aren’t a fan of mushrooms, feel free to leave them off of this Blackstone chicken recipe! It’s going to be just as flavorful.

How do you store leftovers?

Allow the easy smothered chicken to cool down, the put it inside of a sealed container. Refrigerate for up to 4 days.

How do you reheat leftovers?

Microwave method: Place on a microwave safe dish and cover with a paper towel. Heat for 1-2 minutes or until hot all the way through.
Air fryer method: Place the chicken in the air fryer basket and heat at 375 for 5-7 minutes or until hot.
Oven method: Place the loaded chicken breast in a casserole dish and warm in a preheated oven (350 degrees) for 10-12 minutes or until hot.

  • Uniform Sized Chicken – It’s helpful to cut the chicken so it’s sized the same. This way you don’t have to worry about some pieces cooking faster than others.
  • Swap the mustard – If you don’t like honey mustard, feel free to use Dijon instead. Both are delicious!
  • Shred the cheese – I know you may want to save yourself a step, but it’s so much better when you shred the cheese yourself. YUM!

The perfect steak lover recipe. Whip up this fat and juicy steak on the Blackstone Griddle! I love thicker cuts but any type of steak works great. You can use all cuts of steak: ribeye steaks, KC strips, filet mignon, New York, etc. Fire up the Blackstone grill and get to cooking. 

Cooking steak on the Blackstone griddle is incredibly simple, delicious, and fast! With minimal steps and ingredients, you really can’t go wrong! This is an easy and great beginner’s flat-top griddle recipe. Check out my Longhorn Steak House seasoning for your steak, that is my go-to seasoning mix for steaks.

  • Minimal effort is needed to make this recipe on your flat-top griddle. 
  • Very few ingredients are required to make. You can flavor your steak anyway you would like. 
  • Tastes like it was made in a restaurant. The key is to use quality cuts of steak so you get that tender and juicy beef. 
  • You have enough room to cook for a crowd, as your Blackstone griddle grill has a large cook space. 

How To Make Blackstone Steak

Turn on the Blackstone to medium-high heat. Once hot, add butter and let it melt. Any cut of steak works for this recipe. The better quality, the more tender the steak. 

Place the steaks on the hot grill—season with Blackstone seasoning, salt, and pepper. Use Blackstone Steakhouse seasoning. 

Combine the butter, garlic, and parsley in a heat-safe pan and place on the hot griddle. I have some individual-sized cast iron skillets that I LOVE for stuff like this! Melt the butter, garlic, and parsley in a pan.

Flip the steak after the first side has a good sear. Season the second side and begin to add melted garlic butter. Once cooked to your preference, remove from the Blackstone and let rest for 5-10 minutes. Serve and enjoy!Add garlic butter to the seared steak.

  • Fresh garlic cloves—You can crush and mince fresh garlic and mix it with the butter to make a garlic butter sauce to drizzle onto the steak. 
  • Compound butter – You can use compound butter on top of your steak.

Potatoes on the Blackstone work great. The griddle is screaming hot, so you get that perfect sear and crispy potato skin texture. Then, you can season your potatoes on the griddle with your favorite spices. This recipe also works with leftover potatoes for that crispy smashed potato skins and a creamy interior! Why This Smashed Baby Potatoes Recipe Is A Must Make

Simple Ingredients – Raid your pantry and you probably have all the items on hand. This recipe uses simple ingredients but you find it offers big flavor.

Season To Your Liking – I used salt, pepper and oil to season my smashed new potatoes. If you want reach for fresh or dried herbs, creole seasoning, Mrs. Dash, etc. Feel free to flavor the potatoes as you wish.

Affordable – A budget friendly side dish that is quick to throw together and very affordable. Kids and adults will enjoy this side dish recipe.

Ingredients You Will Need

Potatoes—You can use petite potatoes for this recipe or cut Yukon gold potatoes, petite red potatoes, etc. I find the little potatoes offer the perfect fluffy interior you will crave. 

Oil – You can use a cooking oil of choice for this recipe. 

WaterYou will need water to help soften the potatoes as they steam. Once the potatoes are softened, you will work on their crispy edges. 

Salt and PepperFor this easy side dish, I used just salt and pepper to flavor it, but any type of seasoning you would like works. I did use plenty of kosher salt to help enhance the natural flavors of the potatoes.

How to Make

Full directions on how to make Blackstone smashed potatoes are in the printable recipe card below. This is a quick walk through.

Step 1: First thing you will do is wash your potatoes and then pour them in a large pot.

Step 2: Next, add in enough water to cover the potatoes by an inch or two. Then add a splash of oil and a little salt.

Step 3: Bring your potatoes to a boil, and let them cook for around 15-20 minutes or until the potatoes are fork tender. When done drain and let cool a bit.

Step 4: Heat up your Blackstone Griddle on high heat, and let it get hot. Add a splash of oil to the griddle, and then place your potatoes on the grill.

Step 5: Use a spatula, cup, or a cast iron press and press down the potatoes to smash them.

Step 6: Drizzle with more oil, and add on your seasonings. I did salt and pepper to season our potatoes. Let cook for around 4-5 minutes.

Step 7: Flip the potatoes over and grill the other side. Repeat with a little more oil, and seasoning to the potatoes.

Storage Of Leftovers

If you happen to have leftovers you can store in an airtight container in the fridge for up to 3 days. To reheat warm in the microwave or opt to heat up in a skillet on the stove.

You will find the texture of the potatoes alters a bit once it is cooled and refrigerated. Pan cooking helps to crisp back up the potatoes a bit.

Variations To Recipe

Here are a few ways to change up the smashed potatoes on the Blackstone Griddle! Have fun and create a dish you enjoy.

  • Sprinkle on fresh herbs – parsley, Italian seasoning, rosemary, etc. 
  • Spices – Sprinkle with a season saltCajun, garlic, etc. 
  • Add a few dollops of butter as you cook on the griddle, and then toss in some minced garlic. 
  • Use any style of small potato. Or cut up russets into quarters. 
  • You can easily make garlic butter and add it to the potatoes to bring out their natural flavors. You can use fresh or jarred garlic. 
  • Mix in some crispy bacon for a crunchy and salty pairing. You could even thin-slice onions to mix in. Yellow or white onion works best.

Helpful Tips

  • Make sure your potatoes are fork-tender before removing them from the boiling water. 
  • Smashing the potatoes is easy to do; don’t press too hard, or it can break up your potatoes. 
  • Make sure to have the griddle hot and drizzled with oil before you place it on your potatoes. 
  • Use a cup or spatula to smash the potatoes if you don’t have a cast iron press. A burger press or even a potato masher works great for getting the smash potatoes. 
  • Flip over once they are a golden brown color. Then cook the other side until done. 
  • Serve alone as a side, or pair with your favorite dipping sauce.

  • Cook for 3-5 minutes, and then flip the potatoes over once golden brown. Repeat with the oil and seasoning on the other side of the potatoes.
  • Once the potatoes are fully cooked, remove and serve up these smashed potatoes with your favorite main dish.

Seasonings – You are more than welcome to season up your potatoes with any spices and herbs you would like.
Preheat the Griddle – Make sure to get your griddle nice and hot before you place your potatoes on it. This will help lock in a nice sear on the outside skin of the potatoes.

This Blackstone Sausage Egg and Cheese Muffin is an easy McDonald’s Copycat recipe! It consists of juicy sausage patties, a fried egg, and a slice of American cheese sandwiched between an English muffin. Give this Blackstone breakfast sandwich recipe a try this week.

Making breakfast on your Blackstone Griddle is an excellent way to start any day. You can also take your flattop grill camping and on road trips and save money while skipping the drive-thru. Not that there is anything wrong with fast food, but I prefer making my own sausage-cheese breakfast sandwiches instead.

  • Breakfast Sausage
  • Eggs
  • American Cheese Slices

How To Make

Turn on the Blackstone Griddle to medium-high heat. Add a layer of butter to grease the griddle. Form the sausage into loose balls, and add to the hot griddle. Cook for 1-2 minutes, then press down hard with a spatula. This will smash the meat so it cooks fast and evenly.

Add lots of butter to the griddle again and let it melt. Add one whole egg at a time and cook until it starts to set up. Flip the egg over to finish cooking to the desired doneness.

NOTE: I fried eggs without egg rings, but you can use them if desired.

Add melted butter to the English muffins and toast on the flattop. Toast them for as long as you like, then flip and toast the other side.

Place one cooked sausage patty on the toasted English muffin, add an egg, and top with a slice of cheese. Add the top of the English muffin and enjoy!

Do I have to use sausage?

You could swap it for other meats, but we prefer to use cooked breakfast sausage. Crispy strips of bacon would be really tasty! Another yummy option would be Canadian bacon or ham slices. Turkey sausage or Turkey bacon are also great options. Or you would go wild and make it vegetarian instead. For a vegetarian, I recommend adding sliced red peppers, red onions, and tomato slices for a delicious breakfast!

Can I use different cheese?

Any cheese you want will work. American cheese, white cheddar cheese, pepper jack cheese, Swiss cheese, and Colby Jack are popular options. You could even add cream cheese to the toasted muffin for a perfect way to add a unique twist.

Do I have to cook sausage egg and cheese muffin on Blackstone Griddle?

Nope! You can cook everything in a cast iron or nonstick frying pan or skillet. I prefer outdoor cooking year round, but I will also cook indoors. This sausage egg cheese muffin recipe is tasty no matter how you cook it.

How do I meal prep cheesy sausage egg muffins?

Follow the cheese breakfast sandwich recipe precisely. Allow them time to cool down completely. Once cooled, wrap each sandwich in plastic wrap or aluminum foil. Place in a freezer bag, and they will last up to three months.
To reheat, place it on a microwave-safe plate and remove it from the packaging. Add a damp paper towel and heat for 1-2 minutes or until hot in the microwave. You can also heat them in the air fryer at 375 for 5-6 minutes or until hot.

How to Make

Step One: Start by making your marinade. Add the ingredients into a bag or container and mix well.

Step Two: Add your pork in and mix it around and then refrigerate for 2-4 hours.

Step Three: Preheat your Blackstone on medium heat. I like to let the grill heat up for 10-15 minutes.

Step Four: Place your chops on grill. Cook pork for 5-7 minutes per side, or until your pork chops are fully cooked.

Depending on the thickness of your pork chops, the cook time will vary. Use a meat thermometer to ensure the pork reaches internal temperature of 145 degrees F.

Once done remove and let sit for 5 minutes and then serve and enjoy your pork chops.

Storing Leftovers

Refrigerate – You will want to refrigerate any leftovers you don’t eat right away. Pork chops can be stored in the fridge for 2-3 days. Reheat in the microwave, or stovetop, or toss back on Blackstone on low to reheat until warm.

Freezing – These pork chops can also be frozen. Just store in an airtight container or freezer bag for 3 months in the freezer. Thaw in the fridge overnight before you plan to eat.

Recipe Notes:

You can use any cut of pork you would like. I used bone-in pork chops. Just adjust the cooking time to ensure the pork is fully cooked.

I recommend using a meat thermometer to check the internal temperature of pork chops on the griddle.

Allow your griddle pork chops to sit on a plate covered loosely with foil for 5 minutes. This allows the meat to rest and locks in the juices. Otherwise, it can release all the juices and leave your pork dry.

If you need to use low-sodium soy sauce to reduce the sodium in the pork.

  • 1 Gallon Ziploc Bag

Ingredients

  • 3-4 Pork Chops I used bone-in
  • 1/3 cup Worcestershire Sauce
  • 1/4 cup low sodium soy sauce
  • 1/3 cup Balsamic Vinegar
  • 1 tablespoon oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

For The Griddle

  • 1-2 tablespoons oil

Instructions

  • In a Ziploc bag or large container, add your Balsamic vinegar, Worcestershire sauce, soy sauce, tablespoon oil, paprika, garlic powder and onion powder in the bag. Mix with hands to incorporate.
  • Now add your pork chops into the bag, and seal the bag up, getting out as much air as you can.
  • Refrigerate the pork chops for 2-4 hours, or up to 6-8 hours max.
  • When ready to cook preheat your Blackstone to medium to medium high heat. I like to preheat my grill for about 10 minutes.
  • Add a splash of oil on the Blackstone, and then lay out your pork chops. Cook for 5-7 minutes per side for thick pork chops. Or for thinner you can cook 2-3 minutes per side.
  • Cook your pork chops until they reach an internal temperature of 145 degrees F. Remove from Blackstone, and cover with foil lightly and let it sit for 5 minutes. This will lock in juices and keep your pork moist.
  • Serve and enjoy the pork chops!

Hashbrowns – I used store-bought hashbrowns. You are welcome to use frozen I just recommend thawing first as you don’t want the frozen potatoes to warp the hot blackstone.

Cheese – I love cheesy hashbrowns so I wanted to add this in for added goodness. The cheese is optional!

Butter – Real butter that is unsalted is what I prefer as the bacon has enough salt for my liking.

Meat – you can use any type of meat you would like. You can cook sausage, chorizo, or even steak. Feel free to reach for whatever protein you would like.

Eggs – Skip over easy or fried eggs feel free to whip up scrambled and top of the hashbrowns.

Potatoes – Reach for shredded or opt for cubed potatoes. You will just cook the potatoes a bit longer as cubed potatoes will take longer.

Veggies – Dice up peppers, onions, and even mushrooms or other vegetables of your choice to mix in the loaded hash browns.

  1. Heat your griddle on medium to medium-low heat. Add butter and let it melt on the Blackstone.
  2. Once the griddle is hot add your hashbrowns in a thin layer. Season with salt and pepper.
  3. Allow the hashbrowns to set for a few minutes to create a nice golden brown crust.
  4. Flip hashbrowns. On the other side of the griddle lay out your bacon and cook until your bacon is fully cooked.

Expert Tip: Adding frozen hashbrowns to a hot griddle can warp the metal top. Make sure to thaw the hashbrowns first.

  2. Add your eggs in the center and cook to sunny side up, over easy, or even scramble them.

  1. Once the eggs are done, top with the cooked bacon, and sprinkle on cheese.
  2. Let the cheese melt and then dish up this Blackstone breakfast!

Storing

Any leftovers you have can be stored in the fridge in a sealed container. The mixture will last 2-3 days. Then reheat in the microwave or even on the Blackstone or on a pan on the stovetop.

FAQs

Can I use homemade hashbrowns instead of frozen ones?

You are welcome to grate your own potatoes and cook them on the Blackstone griddle. One thing to do is once grated place in cold water to prevent the potatoes from browning. Then drain off the water before placing it on the griddle.

Can I flavor the hashbrowns with spices?

Go right ahead and season with Creole, season salt, garlic powder, onion powder, or your favorite spices.

Why are my hashbrowns soggy?

The key to hashbrowns is allowing time for the potatoes to sear on both sides. If you flip too soon it will not create that golden crust on the potatoes. So be patient and flip the hashbrowns once the bottom side gets golden brown in color.

Ingredients

  • 1-2 tablespoons butter
  • 1 tablespoon oil
  • 1 pound hash browns – thawed and patted dry if frozen
  • 4 slices bacon
  • 4 eggs
  • 1 cup shredded cheddar cheese
  • salt and pepper – to taste

Instructions

  • Heat your Blackstone on medium-low heat. Then add your butter onto the griddle and let it melt.
  • Once the butter is melted and the griddle top is nice and hot you will place a thin layer of hashbrowns on the Blackstone. Add your oil to help create that nonstick surface. Season as you would like.
  • Let it cook for a few minutes, until it creates a golden and crispy crust to the potatoes.
  • While the hashbowns are cooking place your bacon to the other side of the Blackstone. I like to put a press on the bacon to help prevent it from shriking.
  • Next once the hashbrowns are fully cooked make a hole in the center of the hashbrowns. Add your eggs in the center of hashbrowns and cook until they are done to your desired preference.
  • Once the eggs and bacon are done, place bacon on top of the hashbrowns and eggs. Then sprinkle with cheese. Once the cheese is melted dish up and season with salt and pepepr and enjoy.

Cook Time: Depending on how hot your griddle is will vary on how long it takes to cook the potatoes, bacon, and eggs. 
Eggs: You can cook your eggs over easy, sunny side up, scramble, etc. The choice is yours. Leaving the hashbrowns around the eggs helps keep the eggs in place. 
Hashbrowns – Sometimes the hashbrowns can be dry out so if you need you can add a splash of water or oil to help keep the hashbrowns moist. 
Bacon: You can do turkey bacon, opt for sausage, chorizo, or go meatless. 
Veggies: Saute up some onion and peppers for added flavor to the hashbrowns.

Whip up a batch of these smash burgers for dinner tonight. A thin crispy crust hamburger patty cooked on a griddle or even a cast iron skillet. I made these Blackstone Smash Burgers for dinner and they were a hit. 

Smash burgers on the Blackstone aka flat top grill are truly delicious. If you enjoy bar/pub style burgers you are in for a treat. You also might know these as smash patty’s, flat top burgers, or Blackstone smashburgers. What is a smashburger?

You might know Smash burgers from the restaurant or how everyone talks about these delicious thin burgers. 

A round ball of meat is tossed in a hot griddle or grill then smashed and seared. A crispy texture is created on the outside which locks in big flavor!

Why Make Smash Burgers

Flavorful Burger – These are such delicious and flavorful burgers. The sear at high heat adds so much flavor to the meat. 

Flat Top Grill or Cast Iron Skillet – So I made these burgers on my Blackstone griddle. But any flat-top grill or even a large cast iron skillet works. 

Simple Prep – Simple ingredients and simple steps are needed to get this burger recipe cooking. Add any seasonings you would like to this ground beef burger recipe. 

Ingredients

Ground Beef – We get our beef from a butcher shop locally and I used 85/15. Feel free to reach for any beef you enjoy. 

Seasonings of Choice – For us, we did just salt and pepper. But on occasion, I will use a Kansas City Blend spice that we love on burgers. 

Buns – For this go around I used sourdough buns. Feel free to skip buns for a low-carb or go grab what you enjoy. Pretzel buns would be awesome or even an onion bun. 

Toppings – Lettuce, tomato, onions, etc. Load your burgers up or keep them simple. 

Butter – You can add butter to your buns before you toast. This helps your buns crisp up but also adds flavor to your smash burgers. 

How to Make

Full steps on how to make a smashburger is in the printable recipe card at the bottom of the post. This is a visual walk through of how it is made.

  1. First, you want to put your ground beef in a bowl and lightly break it up. Then grab some meat and lightly roll it into a ball. 
  2. Don’t pack the meat in a tight ball, it needs to be loosely formed. I did 4 balls from 1 pound of meat. Feel free to adjust the burger size. 
  3. Turn your Blackstone on high and let it get nice and hot. Or if you are cooking on a cast iron skillet turn to high, add a little oil and let it get hot.  Place burger balls on a hot griddle. Searing your burgers really well is key.
  4. Then with your burger press, press down firmly to flatten your patties. Sprinkle with seasoning and let cook. We made ours pretty thin.  The thin texture and hot griddle create a crispy crust texture on the outside of the burger. 
  5. Around 3-5 minutes check your burger to see if it is crispy on the bottom, and if so flip, season again, and let the other side crisp up.

  1. Place buns on the griddle to toast. Remove buns once a slightly golden color. You can butter your buns or drizzle with light oil on the grill to help the buns toast. 

Expert Tip: Depending on the size of the burger balls you make the cooking time will vary. 

Storing Leftovers

If you don’t eat all your burgers, no worries, store them in the fridge. Just place it in a sealed bag or container for up to 3 days. 

Reheat as you would like and enjoy. The homemade smash burgers are best served warm and fresh. 

Ways to Use Up Leftover Burger Patties

Big Mac Salad – Chop up your patties and then add them to a salad. We have made Big Mac-style salads and it’s so tasty. Any toppings and dressing work! 

Chili – If you are planning to make chili cook up some extra burgers. Then chop into pieces and add all your ingredients for chili. The flavor from the smash burgers will change up the flavor. 

Quesadilla Burgers – Of course, you can make a classic burger with a bun if you so choose. It’s delicious to do a quesadilla-style burger the next day for a slight change. 

Baked Beans with Ground Beef – Make my popular beef and beans recipe and just cut up the burger into pieces. It works great and is deliciously served with a side of cornbread for an easy dinner idea.

Expert Tips

Here are so many techniques used around the world, but here is how I do it, and my tips!

  • Greasing your flat-top griddle or cast iron pan will help prevent sticking. Pressing and searing is the key to the smash burger technique.
  • I used a cast iron burger press. You can place parchment paper or spread oil on it before you press as it can stick to burgers. 
  • If you don’t have a burger press use a sturdy heavy gauge stainless steel spatula that doesn’t have holes. Then press firmly. 
  • The key is for thin burgers when smashing. That’s why you don’t want your ball to be firm or it won’t smash. 
  • Burgers are cooked when the internal temperature reaches 160-165 degrees.
  • Toasting your bun is going to truly add so much flavor to your hamburger.

Variations 

Mix in seasonings – When making your burger balls season the meat before forming to add extra flavor. 

Cheese – Go right ahead and top your smash burgers with cheese if you want cheeseburgers. Once you flip your burger and flatten it again if needed top it with cheese. 

Bacon – Cook up some bacon on the side and then create a loaded bacon burger. 

Onions – You can toss onions on the grill for topping your burger. Add some oil, a little sprinkle of salt, and cook to soften the onions. Yellow or sweet onions are best.

Ingredients

  • 1 pound ground beef I did 85/15

  • 4 Hamburger buns
  • Toppings optional (lettuce, tomato, onion, condiments, etc)

Instructions

  • The first thing you are going to do is start heating up your Blackstone on high heat. Add oil to the griddle and let it fully get warm. I placed my burger press on the grill to get it warm up as well as it is heating up the grill.
  • Now you will crumble up your burger meat, and then loosely make 4 burger patties. Make sure to not pack the burgers together in balls or it will not smash properly.
  • Once the griddle is screaming hot, place your burger balls on the griddle. Use your burger press, or a spatula with no holes, and press firmly, smashing the burger to a thin patty.
  • Once your patties are smashed you will let them cook 3-4 minutes on the first side. Add seasoning on top of the patties.
  • Flip once the bottom has a crust layer on it. This is going to add incredible flavor. Flip and repeat the cooking process. Season the other side of the burger.
  • Place your buttered buns on the griddle top to toast, and then remove once golden brown.
  • Once done, assemble your burger and pile on your favorite toppings. If you want feel free to make cheeseburgers with the smashburgers!
  • Serve up the Smash Burger recipe with all your favorite toppings.

Notes

Burger – You can make your patties as large or small as you would like. Just adjust the cooking time to fit the size of your burgers.
Seasoning – You can mix seasonings in while you are forming your balls or once the smash burgers are on the Blackstone. It is up to you. Any of your favorite seasonings will work for this recipe.
Cast Iron Directions – If you have a cast iron skillet oil and heat on high and get it screaming hot. Place balls in the hot skillet, press down to smash and cook the same.
Parchment paper – You can place parchment paper in between burger and press or spatula to help prevent sticking. If you use parchment don’t heat your burger press up.

Have you tried my Blackstone omelette? A delicious egg omelette loaded with diced ham, bacon, and sautéed onions and peppers. Rolled up and topped with cheese. This omelette on the Blackstone is always a hit. 

If you haven’t tried making a flattop omelette I suggest adding to your menu. It cooks up like a diner omelette you would order from your favorite diner. Try this breakfast casserole for another easy recipe. Or try my Blackstone loaded hashbrowns.

Best part of all you can do is just a plain cheese omelette, or load it up. Create your perfect omelette and dive in, fork first.

This Blackstone Omelette Recipe Is…

Ingredients Needed 

Here are the ingredients you will need for this Blackstone egg recipe! These griddled eggs are fully loaded.

Eggs – It is up to you on how large or small you make each of your omelette’s. I did about a 4 egg omelette for each one I made. 

Vegetables – I sautéed peppers and onions on the grill and then added them into the center once they were cooked down. 

Meat – I cooked up diced ham and some bacon. Feel free to swap with sausage or even do a meatless omelette if you choose. 

Cheese – Shredded cheese adds a nice tang and kick of flavor. Any flavor of cheese will work, 

Butter and Oil – Both are used in making this recipe. The butter flavors the eggs a bit as they cook on the griddle. 

Other Ingredients for Omelettes

How to Make

Step One: The first step is cooking your bacon and heating up the meat on the Blackstone.

Step Two: For me I chopped up peppers and onions as well and tossed them down with a little oil to prevent drying and burning them. Saute till they are softened and a little charred.

Step Three: Once veggies and meats are cooked push over to the edge. Add a little butter down, and let it melt.

Step Four: Slowly pour your scrambled eggs, using the spatula to help catch the egg and prevent it from running too far.

Step Five: Add all your toppings in the center of the egg mixture. I did bacon, ham, peppers, onions, and then cheese.

Step Six: Carefully roll up the omelet, and slide over on the griddle and let it cook a bit longer, ensuring it cooks the center of the egg in omelette.

Step Seven: Repeat to make as many omelettes as you would like. Then top with your favorite toppings. Added cheese, sour cream, salsa, etc.

Storing Leftovers

If you happen to not eat all the omelettes they can store in the fridge for 1-2 days. I find that the veggies inside will go bad first. Reheat in the microwave or in a skillet on the stove.

Helpful Tips For Making Omelettes on Blackstone

Griddle temperature should be low, otherwise it will cook the eggs too fast and your eggs will be overcooked and rubbery.

Saute any veggies first and cook meats for this Blackstone griddle omelette. The veggies will need to soften a bit or it will be too crunchy when you bite into the omelettes. Or that is my personal preference.

When you pour the eggs, pour it very slowly. Otherwise the eggs will run all over the griddle.

Make sure you have butter or a little oil down on the griddle to prevent sticking of the egg mixture.

Use a larger spatula to help with flipping the eggs on top of each other. If you don’t do this then you can tear the omelettes.

Ingredients

  • 2-3 slices of bacon
  • 1/2 cup cubed ham
  • 1 small bell pepper diced
  • 1/2 small onion diced
  • 1 cup shredded cheese
  • 9 eggs whisked
  • 2 tablespoons butter
  • 1 tablespoon oil

Instructions

  • Start by dicing up the bacon and adding it to the Blackstone on Medium heat, along with ham and diced peppers and onions and cook until fully cooked through.
  • I did add a little oil to the peppers and onions to help ensure they didn't burn.
  • Once meat and veggies are done, push to side and then add a tablespoon or so of butter on the griddle. Make sure the griddle is not too hot.
  • Slowly pour about 3 eggs worth on the griddle. I used my spatula to help act as a barrier to prevent it from eggs running too big.
  • Place meat, vegetables, and some cheese in the center of the egg omelette.
  • Then slowly begin to fold the egg onto itself. Be gentle or it can break the egg.
  • Once the omelette is rolled up, move to the side and let it finish cooking. You want to make sure the center gets fully cooked.
  • Repeat the same steps to make the next omelette on the Blackstone griddle.
  • Once the meat loaded omelettes are done, top with sour cream, salsa, shredded cheese, etc.

Notes

Filling – You can do just cheese only, or add tons of veggies. You can fill your omelettes with any fillings you want.
Heat – All Blackstone grills heat slightly different. Just aim for a low heat to ensure it doesn't sear the eggs as soon as you dump them.
Eggs – Aim for 3-4 eggs per omelette. If you want a super large one you can do up to 5 eggs.

Blackstone Philly Cheesesteaks are a shaved ribeye, peppers, onions, mushrooms, and of course toasted hoagie rolls. These simple seasoned Philly cheesesteaks are over the top in flavor, and will leave you filling satisfied.

Give this griddle Philly cheesesteak recipe a try. This recipe does work on any flattop grill, or you could even use a cast iron skillet on the stove. But I will say I find it tastes better on our grill. Try my Blackstone Steak Bites as well!

This is by far my most favorite Blackstone recipe I have made so far. A simple dinner for entertaining guests or a weekday dinner for the family. Try my grinder sandwiches for another quick and easy lunch or dinner option.

Ingredients 

Here is the ingredient list I used for this Philly Cheesesteak Blackstone Grill recipe.

Shaved steak- You can use shaved ribeye or other cuts of been that are shaved thin. The idea is to ensure it is very thin meat to give it the right texture. 

Vegetables– I used bell peppers, onion, and sliced mushrooms. The mushrooms are optional but my husband loves them. 

Provolone Cheese – I used sliced provolone cheese, but you can use Swiss, Cheez-Whiz, or another variety of cheese.

Hoagie Rolls – Grab any hoagie rolls to pile in the steak and veggies. We used a whole wheat hoagie. 

Butter – The butter helps add flavor to the meat and vegetables. I also added extra butter to help roast the buns. 

Oil – You will want to add a little oil to help sear meat and veggies and prevent any sticking. 

Seasonings – Salt, pepper, garlic powder and Worcestershire sauce are all I used to flavor the dish. 

Tips for Success 

  • Let your Blackstone Griddle get nice and hot so when you toss down the meat and veggies it sears nicely. 
  • Thinly slice veggies so they have time to soften and create a golden grilled texture. 
  • I waited till the meat and vegetables were done. Then I added cheese on top and began roasting my buns. 
  • You can place a dome over meat and cheese if you want it to melt faster on the cheese steak Philly’s.

How to Make

Step One: Get your Blackstone flattop nice and hot, I did the high heat. I added a little oil to help create a non-stick surface.

Step Two: Toss down your shaved meat, sliced peppers, onions, and mushrooms. Add a tablespoon of butter down to help flavor the meat and veggies.

Step Three: Next you will sprinkle on the seasonings. Then pour over the Worcestershire sauce, and then stir well.

Step Four: Allow the mixture to sear, tossing every few minutes. You want to cook the steak fully, and get a nice golden sear on meat and veggies. Add on your provolone cheese and let it melt.

Step Five: Once the meat and veggies are close, add the remaining butter down on the other half of the griddle. Then place your hoagie rolls down to toast till golden in color. This takes just a couple minutes.

Step Six: Once hoagies are toasted, pile in the meat and cheese mixture, and serve and devour!

You can leave out the mushrooms if you don’t want to make it with mushrooms. The mushrooms help add flavor but also make helps stretch it. You are more than welcome to skip it.

For the seasoning feel free to change up what you use. I did simple, and it worked great. But you can add any flavors you want. From garlic and onion powder, to Creole seasoning. Feel free to adjust to your liking.

Want to make it low carb? Stuff the meat and veggie mixture into bell peppers for a lighter version. Use low carb tortillas to stuff in, etc. We can eat this just as a meal without the bun but we sure love the toasted bun.

Storing Leftovers

If you do not eat all Blackstone cheesesteaks just store in the fridge for 2-3 days. Then reheat in the microwave, back on the griddle, etc.

Now if you want you can freeze leftovers as well. But you will find the texture of the pepper and onions will become very soggy. It is up to you if like the texture or not.

Ingredients

  • 1 tablespoon oil
  • 2 pounds shaved steak
  • 1 large white onion thinly sliced
  • 1-2 bell peppers thinly sliced
  • 1/2 cup sliced mushrooms
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons Worcestershire
  • 4-6 Hoagie Rolls
  • 6 slices of Provolone Cheese
  • 5 tablespoons butter divided

Instructions

  • To start you will turn on your Blackstone on high heat, and add on the oil. Let the flattop grill get nice and hot.
  • Toss on the shaved steak, and sliced peppers, sliced onions, and mushrooms.
  • Add on the seasonings, and toss on a tablespoon of the butter. Let it melt down a bit, and mix up the steak mixture.
  • Pour on the Worcestershire sauce, and mix well and then sear the steak and veggies on the Blackstone grill.
  • Once the meat is close to done, toss to the side, and make an even layer. Place the sliced cheese over the meat and vegetable mixture.
  • On the other side of your grill you will drop down the 3 tablespoons butter and let it melt.
  • Then place your sliced Hoagie rolls on top of butter mixture to help create a crispy crust on the inside of each roll.
  • Once rolls are toasted, this takes just a few minutes, remove and then fill each hoagie with the meat mixture.
  • Serve up these Blackstone Philly cheesesteaks and enjoy a simple dinner or lunch.

Notes

Meat – I used a shaved steak I bought. If you can't find shaved steak you can make your own. Very thin meat is key, as it gives you the traditional texture of the Philly.
Double Recipe – Go right ahead and make extra if you need. I just did enough for our family. You can make as much as you want.
Toasting Rolls – If you own a smaller Blackstone Grill you can remove the steak and vegetables and then in the same area toast the rolls if need be. Just add a tent of foil over the meat to keep it warm as you are toasting the rolls.
Flattop Grill – This works on other flattop style grills and griddles! You can even cook in a skillet on the stove. I just find the seasoned Blackstone top transforms the flavor quite a bit.

Try out my tex mex chicken with lime cauliflower rice for dinner tonight. This is a Mexican chicken marinade I make and allows the chicken to really soak in all the rich flavors. Toss in a skillet or on your Blackstone and cook up a delicious chicken and cauliflower rice bowl. 

This Blackstone chicken recipe is always a hit in our home. Top with lime juice and sour cream, or pile high with lettuce, tomatoes, and all your other favorite toppings. Or whip up my Philly Cheesesteaks.

This is one chicken dinner idea we make over and over again in our home. It’s simple, quick, and a lower carb dinner. 

Why Make This Tex Mex Chicken

Easy Prep – A no fuss easy prep dinner that you can literally throw together. I do recommend marinating the chicken for at least 30 minutes. 

Marinated chicken – I tend to make my marinade for chicken in the morning and let it soak through the day. This helps to enhance the flavor. 

Blackstone Recipe or Skillet Dinner – I have made this Tex Mex Chicken and cauliflower rice on my Blackstone griddle and on the stove. You can choose what fits you best. Directions for both are in the recipe card. 

Low Carb Dinner – This is a lighter version to say classic rice and Mexican chicken. The riced cauliflower has tons of flavor and even my 5 year old enjoys it. 

Ingredients You Need

Chicken – I love using thin sliced chicken breast I diced up. Any boneless chicken works great. If you use tenderloin cut, remove tenderloin before slicing to prevent chewy chicken. 

Oil – Vegetable or canola are what I recommend. Olive oil has a tendency to smoke when it gets too hot, and this recipe is cooked at higher heat. 

Lime – Not only does the lime flavor the chicken and diced cauliflower, it also helps to tenderize the chicken and lock in moisture when it cooks. 

Chili Seasoning, Salt, Pepper, Garlic Powder, Garlic Salt- Seasonings used for flavoring the dish. 

Worcestershire Sauce – This little ingredient adds a nice depth of flavor to the chicken marinade! 

Cauliflower Rice – Fresh or frozen works! I toss my cauli-rice in the pan or on the Blackstone frozen! 

Tools Needed

You can make this Tex Mex Chicken and cauliflower in a skillet, so I give you both options to try out.

How to Make

Step 1: Slice your chicken into strips. Remove any fat trimming it as you go. 

Step 2: Place chicken in bag or a container. Add all the ingredients for the Mexican chicken marinade in the bag. 

Step 3: Seal the bag and massage it, mixing all the ingredients around. Once mixed place in fridge for 30 minutes or up to overnight to marinate. 

Step 4: Preheat your griddle to medium-high heat for 10 minutes. Add a drizzle of oil and spread around to coat the top.

Step 5: Next toss the chicken on one side cooking for 3-4 minutes then flipping the chicken over. 

Cauliflower Rice Blackstone

Step 6: On the other side of the flat top griddle add your cauliflower rice. Drizzle on a little water and spread it out to a thin layer and lightly season it. Drizzle half of a lime over the top of rice.

Step 7: When the chicken is done remove from the griddle and add a splash of water to lift off some of the marinade on the griddle.

Step 8: Move the cauliflower rice to the chicken area to soak up the flavor of the marinade. Then remove from the griddle. 

Step 9: Place your lime chicken and diced cauliflower into a bowl or eat it separately if you prefer. Add on Mexican shredded cheese or Cotija cheese, sour cream, fresh lime juice, salsa, etc. 

Meal Prep Chicken and Cauliflower Rice

Want a meal prep dish? This chicken and cauliflower rice is great for meal prepping. Simply grab your sealed container and add in some of the chicken, followed by rice.

Then top with some cheese and in a separate compartment or container add the salsa, diced veggies, etc of choice. Then eat cold or heat in the microwave if you prefer.

Variations To Recipe 

  • You could change out the Mexican chicken marinade recipe if you want a different flavor. 
  • Sauté some peppers and onions to go with the dish. I love green bell peppers and yellow onions. 
  • Toss on other veggies and cook with the cauliflower rice. 
  • Use pre-cooked regular rice if not a fan of cauliflower rice. 
  • Add veggies like peas and carrots into cauliflower rice to be more of a fried rice.

Ingredients

Mexican Chicken Marinade

  • 3-4 chicken breasts trimmed and sliced thin
  • 1 limes
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

  • 24 ounces cauliflower rice fresh or frozen
  • 1/2 lime squeezed
  • 1/4 teaspoon garlic salt with parsley

Instructions

  • In a Ziploc Bag or container you want to start by thinly slicing your raw chicken. Trim the meat if there is any fat that needs to be removed.
  • Once done, add in 1 full lime that you juice, discard lime after juicing. Toss in the oil, chili powder, garlic powder and onion powder.
  • Seal bag and massage the mixture to coat all the chicken with the Mexican chicken marinade. Refrigerate for 30 minutes to overnight.
  • Preheat your grill to medium high heat for at least 10 minutes when you are great to cook on the Blackstone.
  • Squirt a little oil down on the griddle and toss on your chicken. Let it cook 3-5 minutes per side until done. Once the chicken is done remove from the griddle.
  • While the chicken is cooking you will take your cauliflower rice and place on the other side of the griddle. You can squirt the riced cauliflower with a little water to help steam the cauliflower.
  • Season with the garlic salt with parsley and 1/2 of a lime squeezed. Cook until it begins to char a little bit.
  • When the chicken is done, remove the chicken and move the cauliflower rice over to the area where the chicken was. Squirt a little water over the area, it will help pull the marinade that is stuck to the griddle and flavor your rice.
  • Once rice is seasoned, remove from the griddle as well.
  • Place the lime cauliflower rice in a bowl, top with chicken, and sour cream, salsa, etc. toppings of choice.
  • Serve up this easy Tex Mex chicken and lime cauliflower rice for an easy dinner recipe.

Skillet Directions –

  1. Marinate chicken as directed above.
  2. When it is time to cook add chicken to a hot skillet on medium heat. Cook until the chicken is fully cooked.
  3. While chicken is cooking in another skillet add the cauliflower rice and seasonings. Mix well and cook until fully done. You will need to add 1/2 teaspoon of oil to the pan.
  4. Once done assemble the bowl and enjoy.
Chicken – You can do more chicken if you want, I have a family of 3 so we don’t eat a ton. But you are more than welcome to double the recipe if need be.
Cauliflower rice – You can use fresh or frozen. If frozen thaw for a minute or two in the microwave. You do not want to toss a ton of frozen on the griddle as it can warp it. A little is okay but you don’t want it all to be frozen.
Storage – Store in the fridge for 3-4 days. Then reheat or eat cold. You can also meal prep with this recipe very easily.
Preheat Blackstone – I recommend preheating your Blackstone 5-10 minutes. This will help create a nice even cook top for your chicken and riced cauliflower.

The first step to owning a Blackstone Griddle is seasoning it. If you are unsure how to season Blackstone Griddle, I can help! I will walk you through the steps, and I have a video! 

Seasoning your griddle is important as it is protects your griddle cooking surface, and helps to prevent food from sticking. You only need a few items to get the job done! All you need to know on how to season a blackstone grill is below.

Learn to season your griddle so anytime you find it is in need of some TLC you will know what to do! I own the 28 inch 2 burner Blackstone. They do make larger ones, if you are in need. We are a family of 3, so we don’t need a huge griddle top.

What is Seasoning

Seasoning means to simply oil, heat and allow your griddle to create protective layers of the oil mixture on top of the actual griddle. This is an essential Blackstone care you will have to do as maintenance.

This helps to create a barrier to protect the griddle surface. Just like cast iron, without seasoning your pan, it would not work. 

Plus as you cook on your griddle, overtime you will find your griddle itself will enhance your foods flavor!

Why Season Your Griddle

Protection – Seasoning your grill will protect the griddle. Think of it like a cast iron skillet. You have to season your skillet before you ever cook in it. You create layers so that you have a smooth cook surface. 

Curing – You are curing your griddle to protect the griddle itself. It oxidizes and binds creating layers on top of your griddle with the oil to protect. 

Non Stick Surface – Seasoning your griddle grill helps to create a nonstick surface. Now, the first time you cook on it, you will find food can still stick a bit. But after a few uses it will become less of a risk for food to stick. 

What Do I Need

Mild Soap and Water – You will use a mild soap and water to clean your griddle before you begin. Coming from a factory you will find it can be dirty and needs to be cleaned. 

Paper Towels – Try to get paper towels that won’t release lint. I found using my husbands blue shop towels worked great. 

Blackstone Seasoning and Conditioner – I bought this to help with the process but there are other oils you can use if you don’t want to use the seasoning and conditioning oil blend. 

Tongs – I used tongs to hold paper towel as we spread the seasoning oil all over the griddle. The griddle is super hot and you don’t want to burn yourself. 

Hest Resistant Gloves – So as you can see we did not use these, but feel free to get heat resistant gloves. This adds another layer of protection to prevent burning yourself. 

I am in no way a pro to the Blackstone. This is just what I do to care for my griddle grill. 

How to Season A Blackstone Griddle

Step 1: Lightly clean the surface of your griddle with a mild soap and a little water. I used paper towels to do this step.

I wiped with some soap and water and then used just a wet towel to go over it. Rinsing between uses to remove any soap. 

You do not want to use too much water. Just enough to get your griddle clean. 

Step 2: Once clean you are going to turn on your propane and light your Blackstone. Leave the heat on high and let it warm up a bit. 

Then you will use your conditioner oil and add a little bit on the grill or dip a paper towel in. Carefully but quickly spread a thin and even layer all over the griddle as it is heating.

Make sure to wipe the edges and sides of the griddle as well. 

Step 3: Next you let it smoke off all the oil blend you just applied. Just sit back and wait as it will take 15-20 minutes of smoking. 

It can smoke a lot, so don’t be alarmed. It is bonding and oxidizing so just let it do what it needs too. 

Step 4: After 15-20 minutes of being on high heat turn your griddle off. Let it cool for a bit before you move on. Wait maybe 10 minutes or so. 

Step 5: You will repeat the steps of turning griddle on high, adding your oil conditioner on, in a thin and even layer, and letting it smoke 15-20 minutes. 

You want to do the oil, smoke, and cool process 3-4 times. 

Why Do I Need Thin Even Layers

Thin and even layers of the oil is gonna create an even cooking experience. If you oil too heavily it will create an uneven cooking area. 

That is why you use a paper towel. Safety spread it around and if you find an area is pooling up, simply wipe and spread the excess oil. 

What Oils To Use On A Blackstone

So, picking an oil is more a personal preference. You are gonna see people swear by one type of oil, and other disagree. Here are some popular oils for seasoning Blackstone griddle.

The biggest thing is using an oil that has a high flash point. Olive oil is great in the kitchen but it smokes tremendously when it gets too hot. That is the type of oil to avoid. 

Expert Tip: Get some coarse salt, it is great for using to scrub top and remove stuck on bits of food and such on your griddle top.

When to Know When To Re-Season The Griddle

Here are a few signs you need to re-season the griddle top on your Blackstone. I recommended seasoning your griddle occasionally to keep it in mint condition. 

  • When food begins sticking on your cooktop. 
  • You find areas of your griddle don’t have a luster and shine. 
  • The cooktop shows signs of rust on the surface or edges of the griddle. 
  • The cooktop griddle can begin to look a bit ashy in color. 

How to Store Blackstone

You can purchase a lid and cover if yours did not come with one.

Ideally, cover and place in an area protected from the outside elements if you can. 

Storing in a shed or garage is helpful. Make sure that you randomly check your grill when you are not using it. As it can begin to rush if it gets moisture on it from the elements outside.

My Favorite Blackstone Accessories

  • Blackstone Accessory Kit – Large Spatula’s, these are great for flipping! I bought a bundle of items.
  • Squirt Bottles – Add one with water and the other with oil. These are super easy to squirt on your griddle! I am a huge fan.
  • Foil Drip Pans – These are nice to use and once you are done cooking, just toss the pan away, and replace with a new one. No mess, just simple and easy.
  • Domes – You can use these for melting cheese, steaming veggies, and more.
  • Warming Rack – This attaches to the griddle and you can place food that is done to keep warm why you finish up cooking. Super handy, easily removes for cleaning.
  • Griddle Press – I used this for my Smash Burgers, Smash Potatoes and other foods. Super handy.

I got a Blackstone Griddle for my birthday, and let me just say I am in love. I am having a blast trying out new flat top grill recipes for my family. If you are looking for easy recipes. This sausage and peppers was a hit, and we will for sure make this again. Or try my patty melt made on the Blackstone Griddle as well.

This brats recipe is also a great easy camping meal as well. Even if you have a pellet grill, propane, or other type of grill you can cook this brautwurst recipe on other devices. Pair these brats with my smash potatoes! Try my air fryer bratwurst if you don’t want to fire up the Blackstone!

Simple Prep – I literally chopped veggies and sliced the brats in under 10 minutes. It was very little prep, and let me just say, it was so delicious.

Ingredients Needed

Bratwurst – I used beer Bratwurst, but any flavor or brand of brats work. Or swap with Italian sausage if you would prefer that.

Onions – I used a sweet yellow onion. I would recommend to use a yellow or white onion for this recipe.

Peppers – Red, orange, and a green bell pepper are what I reached for. Any colors work, and I love the variety all the peppers add.

Salt and Pepper – Season with salt and pepper on the veggies. It is simple but all you want is to enhance the natural flavors of the veggies.

Hoagie Rolls – Any style of hoagie roll or even a hot dog but works. Or you can opt to serve without a bun for a lower carb option.

Oil – You will use whatever oil you prefer using on your Blackstone flat top grill. I used Canola oil, but feel free to reach for what you prefer. Do not use olive oil as it smokes quite a bit.

How to Make

Step 1: First you will want to wash your peppers, slice into long strips, and slice up your onion as well. Then for the bratwurst you will want to butterfly cut your brats. To do this, slice down the center, just not cutting all the way through.

Step 2: Now you will want to turn your grill on, on high. Then clean your grill, and then add a bit of oil down. Place your bratwurst with the sliced side facing down on your griddle.

Step 3: On the other side of your grill squirt on a bit more oil, and toss on your peppers and onions. Squirt a little water, and season with salt and pepper.

Step 4: Now you will cook your brats until nice and golden in color, then flip to the other side. I cooked my brats for around 5-7 minutes on each side.

Step 5: For the peppers and onions you will just move them around to prevent the mix form burning. I cooked until softened, and some had some charring on it.

Step 6: When the brats and pepper mixture are close to done, move over the pepper mixture. Butter or squirt on more oil and then lay your hoagie rolls onto the grill to toast the buns a bit.

Step 7: Once all the items are done, place your hoagie on a plate. Top with a butterfly cut cooked brat, and peppers and onions. Then serve up the mixture!

Expert Tips and Variations

  • Butterfly cutting brats helps to speed up the cook time, and works great for tossing in a bun.
  • Add in some mushrooms for added flavor to your veggies.
  • Sprinkle or top with mozzarella, pepper jack or other cheese if you want a cheesy loaded brat.
  • Season your veggies as you would like. Garlic salt, creole seasoning, etc. would all be tasty.
  • Carmelize your onions if you would like, this will just take longer to do, but the flavor will be incredible.

Ingredients

  • 1 Package of Bratwurst I used Beer Brats, Johnsonville)
  • 1 green bell pepper sliced into strips
  • 1 red bell pepper sliced into strips
  • 1 orange bell pepper sliced into strips
  • 1 yellow onion sliced into strips
  • 5 hoagie rolls
  • 2-3 tablespoons oil
  • Salt and Pepper

Instructions

  • Start by washing and slicing up your peppers and onions. I did long strips for the peppers and onions, like you would for a fajita mixture.
  • Then you will take your bratwurst and slice lengthwise without cutting all the way through. That way you can open up the brat to make it into a butterfly cut.
  • Turn your Blackstone Grill on high, and then add on some oil. Place your brats cut side down on your grill.
  • Then add more oil on the other side of your flat top grill and then pour on your peppers and onions.
  • Add a squirt of water, and season with salt and pepper.
  • You will cook your brats for around 5 minutes, and then flip them over once they are golden in color. Cook on the other side until the brats are fully cooked. You want the internal temperature to read 160 degrees.
  • Saute the veggies until softened and a little charred in spots.
  • When the brats are close to done, you will add a little oil to an open area on the grill and place your sliced hoagie rolls. Toast them so they are golden brown on one side.
  • To assemble place a brat on a bun, and then add your onion and peppers on. Serve and enjoy this brats with peppers and onions with your favorite sides!

Notes

Italian Sausage – Instead of brats you can use Italian sausage. It will change the flavor a but still be delicious.
Hot or Mild – You can pick whatever flavor of brat or sausage you want. We did beer brats which are mild but you could do hot brats if you want.
Veggies – You could add in mushrooms to the mix if you want added flavor.
